I think I will taste best in a lemon caper sauce!
You chef it up too??Caper Sauce:
2tbls of capers
1 tbls butter 2 tbls olive oil 3 tbls lemon juice
1/4 cup of chicken broth
teaspoon of flour
heat olive oil, and butter till butter sizzles, add capers and saute for 2 mins. add chicken broth and reduce by half add lemon juice and thicken the rest of the way with flour.
pat dry(needs to be very dry for this to work)
take a cup of flour a teaspoon of cayenne, paprika a pinch of salt and pepper and combine well on a cookie sheet.
dredge dry fish in the flour mix. Saute in olive oil in butter. Hint(make sure your pan is hot first) The fish will crisp up nice on the outside with the little bit of flour. Simply top with the caper sauce after that!
