I put the grind and smoke on some venison and piggy over the weekend and turned out some really good summer sausage and pepperoni. Seasoning are from Eldon's Sausage. No fried anything... low sodium my @$$...I need my salt! Eat up while you can... after 50 there's all sorts of things you get to try. Like all-bran...decaf...green tea...bleahhh! More flavor in my epoxy spill rag than in some of the stuff I'm supposed to eat. Lucky devil....
I do what I can. You haven't been talking to my wife have you? ;D The sausage is pretty lean, but I'm sure the sodium level is out of sight. One piece wouldn't hurt too much as long as you wash it down with lots of beer. There's a chance of a white classic racing around the north end of the Goon this Saturday loaded with sausage if you can catch it. ;D
