ive been fishing from a bonefide SS-127 for a few seasons and stumbled across the “micro skiff” concept on Pinterest. Looking for advice on something small (one person use) basically would like a small powered boat for some of the bigger lakes as paddling gets tiring after a long day fishing.

Welcome aboard. What is a SS-127? There are many solo powered skiffs out like the Bote Rover and the Solo skiff to name a couple.

It is a high seat position fishing kayak. Looking for something that I could get halfway decent performance with a 5hp

Only “problem” is no skiff manufactures/dealers around here

Welcome! If you are still planning on fishing lakes in your area and want to stay small with low horsepower, look into a jon boat. Options are numerous, and you can tailor most to fit your need.
