Epoxy/Graphite bottom coat questions.

I've "invested" at least 20 hours sanding, filling and fairing the bottom of my skiff that last few days and I'm about half way done, knowing damn well the first oyster littered flat I pole I'll be adding several new scratches to my fresh bottom.... After seeing your entire hull covered I'm leaning toward coating the entire bottom of my skiff.

Guessing your skiff slides on and off the bunks easily.
 
I can see that, I did a test on a panel I've been using at each step of the finishing process and layer down two coats and let it cure. It does give way, however it's not as bad as if it was only paint. Coming from the bass boat world, I got a quote on a professional installed Hamby's glassed in unit but I couldn't justify almost $1K. I've used the press on keel guards in the past with success, but wanted something I could go back and repair easier in the future... just mix more up and roll it on. Now I'm trying to figure out how long until I can lay down coat 2 "hot coat". May be an all nighter.
 
From the specs, some were around 3 hours, we'll see. I may have to consider sanding it between coats. I'm impressed how it laid down pretty flat, figured I would have some orange peel and possibly fisheyes to deal with.
